- Get 1 kg carrot
- Prepare Bowl malai
- Get 1/2 bowl of sugar
- Prepare as needed Almonds, raisins, cashews to sprinkle on top
- Prepare 1 tbsp ghee
- Prepare 1 bowl milk
- Take 2 green illaichi
Steps to make Carrot halwa:
- Heat a deep thick bottom kadai. In it add ghee. When the ghee heats up add to it the illaichi
- When illaichi splutters to it add grated carrots and stir it nice for 5 minutes.
- Then after stirring keep the kadai covered for 5 more minutes. Let the carrot cook in its own juice.
- Then open the steel cover and to it add a bowl of homemade malai and stir again nicely for 2 minutes so the malai mix with the carrots.
- After the malai has mixed add a bowl of milk and stir again for 2 to 3 minutes.
- Keep it covered again. The milk, malai and grated carrots will cook together for another 7 to 8 minutes.
- Then open the cover and check the status of the halwa and add the sugar and mix again. The sugar will dissolve.
- Allow it to cook uncovered till the milk and juices evapourate. When you stir it you will feel the halwa is cooked properly.
- Switch off the gas. Serve the halwa with chopped nuts and raisins.
