- Add flour, milk, egg in a mixing bowl and mix until all combine.
- If you use fresh spinach, blanched in hot water for a few minutes and squeeze the access water out. If you use frozen version, put the spinach ball in the microwave for 20 seconds and squeeze the water out.
- Add spinach, spring onions, nutmeg, salt and pepper in and mix well.
- Spray some olive oil on the medium heat pan. Add about 1 big tbsp of the flitter or pancake mix, flattened down, once cooked on one side flip over and cook the other side.
- Serve on its own with a wedge of lime or lemon or you can top up with poached egg or bacon.
