The ingredients needed to make Collards:
  1. Take 5 pounds collard greens
  2. Make ready 2-1/2 tablespoons Pink Himalayan salt
  3. Get 1/3 cup distilled white vinegar
  4. Take 1/4 cup + 2 tablespoon sugar
  5. Take as needed water
  6. Take 3 tablespoon bacon Drippings
  7. Make ready 1/4 pound Bacon
Steps to make Collards:
  1. Look over and wash the leaves. Remove thick stems.

  3. In a pot add salt, sugar, 2 cups water and vinegar.
  4. Put on to heat. Add bacon and bring to boil
  5. When the broth is boiling good add the collards. This allows the greens to shrink and fit in the pot faster.
  6. Stir every 20 minutes don't allow them to clump up
  7. After 1-1/2 hours mix the remaining sugar with water and add to the collards. Keep adding water as needed. I think I used a gallon or more total.
  8. Add the rest of the seasonings stir well
