- Make ready 1 medium potato
- Prepare 3 medium eggs

- Peel your potato and dice into small cube. Rinse under a tap and add 1tsp of butter, crushed black pepper and sprinkle a little salt over it, cover with cling film and cook in the microwave for 2 mins.
- In the frying pan add the cooked potato and fry for 2 mins, add more butter if necessary. Add the onions and chilli and fry for 1 min. Turn off heat.
- In a medium bowl crack the eggs and add the cooked potato mixture. Add the rest of the seasoning and stir well till the egg mixture is well incorporated.
- Pour the mixture back into the frying pan(make sure the frying pan can be used in the oven)
- Sprinkle cheese over the egg and place it in an oven for 7 mins. Oven temperature should be 180 degrees.
