This beef tomato stir-fry recipe comes from old memories of my mother's backyard garden, late summer tomatoes, and a hot wok. Back then, when we were kids, we loved the beef and the mellowed sweetness of the tomato sauce mixed with rice, and you'll see why when you make this dish! - In a cooking pan, add oil, butter, tomato paste, ginger paste, blended scotch bonnet and onion and stir fry for 2 minutes before adding the vegetables
- After adding the vegetables allow for 2 minutes to cook and then add the parboiled rice and seasonings. Mix well and cover to cook for another 2-3 minutes
- And now for the shredded beef add the meat to the cooking pot, ginger powder, garlic paste, chopped onions, water and cover it until the meat is nearly cooked
- When it's almost done add the blended scotch bonnet and cover again to cook for few minutes
- Now add your sliced red and green bell pepper and cover again to cook for 2-3 minutes
- When it's done serve along side with the tomato fried rice and enjoy. I also added my potato salad when serving for myself
