Instructions to make Assorted cashew sweets:
  1. Soak figs in water for 3-4 hours. Mix saffron in milk in one bowl. Grind cashew in mixer at low point. Make sure that mixer bowl dont get heated otherwise instead cashew powder it will become cashew paste. Repeat the procedure of grinding and sieving until you get all cashew in fine powder form. Then divide the cashew powder in 5 parts in 5 separate bowls. Add 1 tablespoon milk powder to all parts. Add cocoa powder to one part.
  2. Now in a pan take sugar and water for 1 part of sweet. Heat it until sugar dissolves and sugar syrup is formed of half to one strand. Now add cashew powder and stir continuously until it's converted to smooth paste.
  3. Add little ghee. The paste will leave the pan. Quickly transfer the paste to the plate. Let it cool down for 3-5 minutes. Then roll it and cut into diamond shape. Apply silver varakh on it.After cooling down completely separate the pieces.
  4. For chocolate kaju-katli, take cashew and cocoa powder mix. And do the same procedure like above.
  5. For kesar kaju-katli, take 2 tablespoons of water with 1 tablespoon of saffron milk. Do the same procedure. If you like, can add a little saffron food color also.
  6. For kaju-watermelon, prepare kaju-katli paste mix by the same above method. Divide it in 2 parts. Add red food color in 1st part and green food color in 2nd part. Make small balls of red dough. Cover it with green dough. Let it cool down. Then cut it into 4 parts. Apply some cardamom granules on them.
  7. For kaju-anjir rolls, grind soaked figs to make smooth paste. Add 1 spoon of sugar to it. And heat it. Add 2-3 tablespoons of leftover kaju paste. It will give good binding. After cooling down completely roll it long. Prepare kaju-katli paste mix again from last part. And roll it like roti. Put fig roll at one end.
  8. And roll it together. Roll firmly. Apply silver varakh on rolls. After cooling down cut the rolls to small pieces. All 5 different kinds of cashew sweets are ready.
