- In a bowl add gram flour, salt, sugar, turmeric.
- Mix everything together.
- Gradually add water to make nice thick and creamy batter.
- Mix well so that there are no lumps and should be a nice flowing consistency not to thick or thin.
- Let the batter seat for about 10 mins.
- Grease the square or round shape tin with oil.
- After 10 mins add Eno fruit salt, give it a quick mix.
- When you add Eno you can see batter become in foaming consistency, make sure you mix it well.
- Pour the batter in to the tin. Don't tap the tin just spread it out evenly on all sides.
- Now we can steam cook the Dhokla batter.
- Take a pot add water, place stand let it boil, now place your tin gently in to the pot.
- Close and steam cook on medium low flame for about 20 mins.
- After 20 mins just insert a toothpick, if it is clean. It means Dhokla cooks completely. Remove the tin let it cool completely.
- Take a pan add 1tbsp oil,add 1/2 tsp mustard seeds, when mustard seed start splattering add green chillies, few curry leaves.
- When it splits reduce the flame, add 1/2 cup of water, add 1/2 tsp salt, 2 tbsp sugar.
- When water comes to boil, turn off the flame and squeeze half lemon juice.
- Remove the Dhokla from the tin, cut in pieces. Pour the tempered sugar and water solution. Make sure you cover all the area.
