Steps to make Khaman dhokla:
- To make khaman dhokla, first of all strain the gram flour into a big bowl with a strainer so that the thick granules will get left behind and you'll get a smooth and fluffy batter. - Now add salt, citric acid (lemon juice), finely chopped ginger and finely chopped green chillies.
- Then add powdered sugar and 2 pinch asafoetida into the bowl. - Mix all this ingredients properly and then add little water step by step and make a thick batter with it. Don't add the water directly otherwise it will create lumps in your batter. Add it little step by step and mix it with a spoon.
- Whisk it in one direction with your hand for atleast 10 to 15 minutes. - Add 2 tsp oil and mix well. - This work of whisking is the only hard work you have to do for making the dhokla. - After whisking it continuously for 10 minutes, keep it for rest for at least 25 to 30 minutes.
- After 30 minutes of complete rest add 2 tsp baking soda into it and whisk it again thoroughly only for seconds. - Now without wasting any time add this batter into a container in which you want to make your dhokla.
- Take a big bowl and boil some water in it. - Make sure that it can sustain your container. - Put a stand into the bowl. - Now put this container over the stand. - Put the gas on medium flame and cover the lid gently.
- Cook it for at least 20 to 25 minutes at medium flame. - After getting 25 minutes put off the gas flame and let it rest for 5 minutes. - Don't open the lid for five minutes and it will give you more better result.
- Now your dhokla is ready but it is incomplete without a tempering (tadka) over it. - So for making a tempering heat 1 tbsp of oil in a pan. - Add mustard seeds and let it crackle. - Add some slit green chillies, curry leaves - Add 1 cup of water into it. It will produce some sizzling sound.
- Now after adding water add some sugar and 2 tsp of lemon juice. - Put off the gas flame and let it get lukewarm. - Add this lukewarm tempering over your dhokla and enjoy your day. - Your dhokla is ready. garnish it with some finely chopped fresh leaves and some type of dips and chutneys.
