- In a pot, add the carrots and the potatoes and boil them in water till the get softer but not mashed.
- Once boiled at your preference level (i prefer them to remain a bit crunchy), take them out of the water and slice/cut them in pieces. Let them cool down.
- After 30 mins, Season with salt and pepper, add the onion and the parsley and drizzle with extra virgin olive oil. Mix everything together and add salt at your preference. Enjoy!
