- Take Pearl Little Millet
- Make ready chopped Carrot and beans mixed
- Get shelled fresh peas
- Prepare Soya Chunks soaked in hot water and softened
- Get mixed nuts (almond, cashew, pistachio)
- Take Ghee
- Make ready medium sized Onion chopped
- Prepare Ginger powder
- Take Garlic powder

- Make ready Garam masala powder plus a generous pinch
- Take Salt
- Make ready Saffron strands (optional)
- Take Hot water
- Prepare Whole Garam masala
- Take Bay leaf
- Take Cinnamon stick small
- Prepare Green Cardamom
- Take Cloves
- Take White peppercorns
- Make ready Black peppercorns
- Prepare generous pinch of Shaha jeera
- Take Star Anise
- Get mace
- Make ready For Garnishing (optional)
- Make ready Pomegranate
- Make ready Mint leaves
Instructions to make Veg Pearl Little Millet Pulav:
- Dry roast the Pearled Little Millet for about 3-5 minutes…keep aside.
- Heat ghee in a pot with thick bottom. Fry the nuts and take it out n keep aside. In the same ghee add the whole dry Garam masala. Once it crackles add the onion and saute. Then add all the ginger and garlic powder, turmeric & chilli powder, cummin & coriander powder along with salt and mix well, add about 1/4 cup of hot water too so that the masala/ spices doesn't burn.
- Add the carrot, beans and peas also and cook…if required add about 1/4 cup more water. After sometimes add the soaked soya Chunks too (discard the soaked water) and cook, add 1/4 cup more water if needed….add garam masala powder and cook for about 5 minutes. Then add in the dry roasted pearl little millet & saffron and mix well.
- Add in the 1& 1/2 cup hot water, sprinkle a generous pinch of Garam masala powder and add in the fried nuts, mix. Cover it nicely so that the steam doesn't escape…use aluminium foil too along with the lid and give DUM for about 15 minutes on medium flame (of the small gas burner). Then put off the flame and let it rest for 10-15 minutes more…open the lid and fluff up the Veg Pearled Little Millet Pulav. Serve hot! Garnish with pomegranate and mint (optional). Bon Appetite!!!
