Instructions to make Nawratan Pulao:
- In a wok heat oil and fry the potatoes, carrots, beans for 4-5 mins. Set aside
- In the same oil add paneer and fry till golden in colour. Set aside
- In the same oil add cauliflower florets and fry, set aside
- In the same oil add raisins, cashew, almonds and walnut and fry for 1-2 mins. Set aside
- In the same oil add green cardamom, cloves, cinnamon stick, ginger garlic paste, chopped garlic, bay leaves. Fry for 1-2 mins
- Add the cooked rice and fry on medium heat for 4-5 mins
- Add saffron dipped in milk to the rice and stir. Add the fried vegetables and peas, lime juice. Add salt and fry well.
- In a separate pan heat ghee and add cumin seeds, and after few seconds pour into the rice. Stir well. Set aside
- Garnish with lime wedges, sprig of coriander leaves and green chilies and serve
