  2. Take a pan and add oil fry the onions meanwhile cut eggplants to 4 sides like a flower wash them then add it to the pan
  3. Fry the eggplants in a low flame till they get soft and well cooked.
  4. Now add the powder we made above, add oil on the above so that we will get the aroma of the spices to the eggplants.
  5. Add mint leaves, chilli powder, salt and garam masala and mix it well then keep it in a low flame for 5 minutes
  6. Now add the rice to the mixture and stir it slowly so that eggplants wont get mashed
  7. Mix it well and keep it in a low flame for 2-3 minutes more, then add coriander.
