- In a mixture grinder make a paste of ripe banana.
- Then pour banana paste in a mixing bowl then add maida, sugar, baking powder, cardamom and sauf. Mix all dry ingredients well.
- Now slowly add milk and keep stirring if needed add water slowly making a smooth batter. Use a whisker for best result.
- Heat oil in a deep and heavy bottom vessel. When fumes start coming from the oil now with the help of a ladle add mixture into the oil. Fry one or two pieces at a time and turn only once. When pokaras become golden brown and pluffy take it out on a tissue paper to soak excess oil.
I have never seen raw banana pakoras being served in North Indian restaurants. I don't know what recipe they had. They used to serve assorted mix veg pakoras or bhajiyas made from veggies like. Pakoras are an all-time favorite snack in India. They are perfect for a rainy day, and delicious paired with a cup of hot spicy Indian chai.
