Steps to make Rajasthani ghevar:
  1. For syrup, boil sugar and water together in a pan. Add the lemon slice to get a transparent syrup. When the sugar melts completely, add kewra jal and elaichi powder. Boil till one string consistency. Remove the lemon slice when cooked.
  2. Batter- take ghee in a bowl, add 2cubes of ice and whisk till it becomes creamy, cold and the ice melts.
  3. Add the flour in batches, bind together to avoid lumps.
  4. Add cold milk in batches and prepare the batter. Don't use more milk, add cold water if needed.
  5. Prepare the batter a little thicker than milk.
  6. Take a kadhai and add ghee to half the depth, and heat.
  7. Take a big spoon to pour the batter in kadhai, add 1tbsp batter at once. Pour in centre of ghee, slowly in one continuous thread like stream. Allow the foam to settle. And repeat it again. Pour at least 2big spoons of batter.
  8. Take out the ghevar when the colour turns light brown, and tilt the kadhai to cook from all sides.
  9. Make 4 ghevar's and keep them aside on a stand, over a plate.
  10. Place the ghevar's one on one, then pour the syrup from above, till the syrup flows from beneath.
  11. Garnish them with almonds and pistachios.
  12. You can store the without syrup ghevar for 1-2weeks. And when ready to eat, just pour some syrup and enjoy.
