  2. mix all the dry spices in the food processor … if you don't have a food processor then mix with a wisk well.
  3. mix rub all over roast and let rest for almost 1 hr.
  4. put the bay leaves and 2 cup of chicken broth in the bottom of crockpot.
  5. place roast fat side up in crockpot. If there isn't enough fat I lay thick bacon over the 'up' portion of the roast. after you put leftover rub on the roast.
  6. let roast cook 5 hours and turn.
  7. after 10 hours on low take roast out of cooker.
  8. remove bay leaves, when you take it out to shred.
  9. shred roast using forks and put back in cooker.

I skipped all the marinate ingredients and bought "Mojo" sauce. (I live in Miami it's a standard Hispanic marinate sold everywhere here). Tender, slow cooked pot roast stuffed with Spanish chorizo and green olives. Boliche is a round roast stuffed with chorizo amongst other meats and vegetables. This version keeps it simple and classic! Other cooks also add olives to stuff the round roast, but this version keeps it simple and classic.
