- Prepare 1 tsp mustard seeds

- Get 1 tsp coriander seeds

- Make ready 1/4 tsp garam masala
- Take 1 tsp tandoori masala
- Make ready 1/4 tsp amchur powder
- Take 3/4 tsp turmeric powder
- Get 1/2 cup chopped onion

- Prepare 1 inch piece of ginger

Steps to make Tandoori-Soyabean Stuffed Eggplant Recipe(Restaurant Style):
- Peel the eggplant from three sides. It helps to stuff the eggplants easily & hold there shape after being cooked.
- Heat 2 tbsp oil & fry the eggplants till changes colour to brown.
- Heat another pan with 2 tbsp oil, add cumin seeds & then chopped onions. Cook till they get translucent.
- Add chopped garlic to the fried onions. Add chopped tomatoes & green chillies, stir well.
- Add soybean to the mixture & cook it till it gets well combine. Add red chilli powder, grated cheese, salt & stir well. Allow the eggplants & soya bean mixture to cool down before stuffing.
- Open the slit.Stuff soybean mixture into eggplant.Seal with wooden toothpicks.
- Prepare the gravy- Blend all the spices together in a blender in powder form.
- Add ginger, garlic,onion in the same blender & blend again.
- In a kadai heat one tbsp oil & add the spice mixture & cook for few mints.Add other spices like asafoetida powder, turmeric powder, garam masala,amchur powder & tanduri masala.
- Add 1 cup water to make thin consistency of gravy & then drop stuffed eggplants into it.
- Cover the kadhai with a lid & cook on low flame for 4-5 mints. Then switch off the flame.
- Soybean stuffed Tandoori Eggplant is ready to serve.
- Transfer it to a serving plate & decorate with chopped coriander,onion rings & tomato.
- Serve it with phulkas, rotis or rice.
