The ingredients needed to make Chicken Omelette:
  1. Prepare 2 Egg
  2. Get 1 Chicken breast (100 gm) (raw)
  3. Take 1 Tomato small
  4. Take 1 Onion small
  5. Get 3 Green chilli
  6. Get 3/4 tsp Chicken masala Shan Tikka
  7. Prepare 3/4 tsp Ginger Garlic paste
  8. Get 3.5 tbsps Oil
  9. Prepare Salt
Steps to make Chicken Omelette:
  1. Cut the boneless chicken into pieces. Squeeze out all the water from the chicken pieces. And add the tikka masala and salt. Chop the onion, tomato and green chilli.
  2. Heat 2 tbsp oil in a non stick pan. Add the chicken pieces and 3/4 tsp of ginger-garlic paste and mix well. Heat on medium high flame. Tilt the pan to one side to get the max effect of oil.
  3. When the chicken is slightly browned and almost done (approx 3 min), add the chopped onion, chilli and tomato. Add salt for the veg. You can check if the chicken is done by breaking the pieces with a spatula. It should cut easily. Break up the larger chicken pieces.
  4. Cook until the veg is done (approx 3 min)
  5. Break the eggs into a vessel add salt and mix them with a fork, add the fried mix into the egg and mix. Retain the excess oil in the pan.
  6. Add 1.5 tbsp of oil to the pan and heat. Add the egg mix into the pan
  7. Jerk the pan a bit in a circular motion so that the egg mix spreads well and the oil becomes foamy. After a minute, cut the omelette into 4 pieces using a spatula (while in the pan). This makes it easy to turn over and also gives extra crispy edges. Make sure that the pieces are completely separated. Jerk the pan a bit more (1-2 min)
  8. When the edges are browned, turn the pieces over individually and cook for 1-2 min more.
