Instructions to make Shahi tukray:
- Boil milk with half pack of the heavy whipping cream, cardamom and saffron till it starts getting thick and reaches half the quantity. While the milk is boiling, keep on separating the cream layer (malai) from the top and put it in the refrigerator. It took me about 2 hrs to get the milk thick. Add sugar to the milk 10 mins before taking it off the stove and let it rest for 15 -20 mins or till the milk is not boiling hot.
- While the milk is boiling remove the sides of the bread, cut them diagonally and shallow fry them till they turn light golden in color(don't deep fry or over fry them as the bread will get hard).
- Now arrange the slices in a medium sized rectangle dish. Pour half of the milk over the bread. Bread should be soaked in milk but not floating in it. Now take out the malai/ cream from the refrigerator and mix it with cream or whip the left over whipping cream (whip the cream without sugar) and add it to that and spread it over the slices. Now add the second layer of bread and pour the remaining milk over it till the bread is soft. Spread the rest of the cream on top.
- Sprinkle few strands of saffron and bake it at 325 F for 15 minutes. Let the dish cool and sprinkle almonds and pistachio and shahi tukra is ready to be served
